1. 点蜡烛(晚餐)
A. 服务员退后半步,点燃火种,身体前倾吧餐台上蜡烛点燃后,立即熄灭火种。

B. 注意火种不能碰到客人。
Note that the fire can not meet the guests.
2. 推销餐前饮品,酒水员或听面领班向客人推销饮品。
Pre —dinner drinks marketing : wine staff or the office of surface foreman sell drinks to guests.
3. 上餐前饮品服务:酒水员在客人右侧上餐前饮品,并报上饮品名称。
Pre —dinner drinks on the service :members of the guests drinks pre—dinner drinks on the right side, and report on the drink name
4. 上面包,牛油 On bread, butter
A. 牛油碟放于面包碟正上方1.5厘米处。

3)如果早餐包含面包,是否提供一篮面包并放在餐桌上?
4)在请客人点菜时,侍应是否表现出其清除了解餐牌上的菜式及烹调原料?
5)侍应是否首先请女士点菜?点菜时是否与客人保持眼神交流?
6) 如果客人不从餐牌上点菜,侍应能否满足客人合理的要求?
7)点菜时,侍应是否询问了所有细节(入主盘的调料,拌菜等等)?
6. 撤换餐用具 :Replacing tableware
撤换餐碟:在客人用餐过程中,值台员应不断巡视自己的区域,如客人餐碟中的骨刺残渣超过三分之二时,应及时更换。Replace the meal dish:in the guests dining process ,the value of

1) 撤换餐碟时,值台员应左手拖拖盘,将干净的餐碟整齐地叠放在一起,从客人右侧撤
下脏的,并换上干净餐碟。

具体要求
1) 当桌面烟缸中有两个或两个以上烟蒂时,应及时撤换烟缸。

2) 撤换烟缸时,值台员应左手托盘,将干净的烟缸整齐地叠放在托盘内,行走至许撤换
烟缸的餐桌旁,轻声说:“对不起”,以示打扰客人的歉意。
