麻婆豆腐,早先叫陈麻婆豆腐,是中国最富地方风味的特色菜之一。当年,成都万福桥边有一家“陈兴盛饭铺”。店主陈春富早逝,小饭店由老板娘陈大嫂经营。因为她脸上有些麻子,人送外号“陈麻婆”。她烧的豆腐又麻、又辣、又香、又嫩,独具风味,人称“麻婆豆腐”。

Mapo Tofu, which was first called Chen Mapo Tofu, is perhaps one of the most typical Chinese local dishes. Many years ago there was a small restaurant named Chen Xingsheng Eating House close to the Wanfu Bridge in Chengdu. As the owner Mr. Chen Chunfu died in his prime, the restaurant was run by his wife Mrs. Chen, who was nicknamed Chen Mapo due to her pock-marked face. In Chinese mapo means pock-marked granny. Spicy, hot, delicious and tender with a distinct flavor, the dish of tofu she cooked was called Mapo Tofu.
麻婆豆腐
Mapo Tofu
主料:豆腐250克, 牛肉75克, 青蒜苗15克
配料:豆豉15克, 花生油75克, 酱油、精盐、辣椒粉、花椒面、淀粉、高汤适量。 制法:1. 将豆腐切成小方块,放在开水中浸泡一分钟左右,捞出沥干;
2. 将牛肉切成末,蒜苗切丁, 调好淀粉;
3. 将油放入锅中用小火烧热,加入肉末炒香,下精盐、豆豉炒匀,再放入辣椒粉炒
出辣味,炒好后起锅备用;
4. 锅内加高汤、豆腐炖3~4分钟,再放酱油,下淀粉勾芡,轻推几下(不要把豆腐
弄碎),盛入碗中,撒上花椒面、蒜苗丁即可。
特点:麻辣鲜香,色泽艳丽。
Main ingredients: 250g tofu, 75g beef, 15g green garlic shoots
Auxiliary ingredients: 15g fermented black beans, 75g peanut oil, appropriate amounts of soy
sauce, fine salt, chili powder, Sichuan peppercorn powder, starch and stock
Preparation
1. Cut tofu into small cubes, place cubes into boiling water for about one minute before
leaching out;
2. Chop beef into mince, cut garlic shoots into small pieces; dissolve starch into water and stir
well.
Cooking
3. Heat peanut oil in a wok over small flame; add and fry minced beef until it is crispy and
fragrant; add salt and fermented black beans to taste and stir them in; then add chili powder and stir until spicy flavor comes out. Now pour all the cooked ingredients into a pot.
4. Pour stock into wok and add drained tofu cubes; simmer for 3 or 4 minutes; add soy sauce
and pour starch mixture to thicken all the ingredients together, and stir gently with the back of a ladle (take care not to break tofu cubes). Finally, put everything into a bowl, and scatter Sichuan peppercorn powder and green garlic shoots pieces over them evenly. The dish is ready to serve.
